Unicorn Cheesecake

For the Crust

  • ½ cup almonds
  • ½ cup pecans
  • 1 tablespoon coconut oil, melted
  • 1 tablespoon rice malt syrup
  • ½ teaspoon vanilla extract
  • A pinch of Himalayan/sea salt

Basic Cream

  • 1 ½ cups cashews, soaked overnight
  • 9 tablespoons of lemon juice
  • ½ cup rice malt syrup
  • 1 can coconut cream
  • 1 tsp vanilla extract



  • 1 cup fresh/frozen strawberries
  • 3 tablespoons melted coconut oil


  • ½ avocado
  • 3 tablespoons melted coconut oil


  • A handful blackberries
  • 1 teaspoon Organic Burst Acai powder
  • 3 tablespoons melted coconut oil

Topping (optional)


  1. Make the crust. Place the nuts into a food processor. Pulse until crumble. Be to not turn them turn into nut butter.
  2. Mix in coconut oil, rice malt syrup, vanilla extract and salt. Pulse until a dough is formed.
  3. Scoop dough into a muffin pan. Using your fingers, press the crusts down firmly and on the sides of the pan.
  4. Freeze the crust while you make your filling. 
  5. Make your base filling. In a blender, blend all the ingredients until smooth. Divide mixture into 4 bowls.
  6. Make the coloured layers. Place one of the mixtures into a blender. Add in mangoes and coconut oil. Blend until smooth and pour into the muffin pan, over the base layer. 
  7. Repeat this process for the rest of the layers. 
  8. With a toothpick or knife, stir the layers once to create the swirl effect.
  9. Freeze for at least 4 hours.
