This delicious soup is packed with ingredients that are alkalising, cooling and detoxing to help you feel balanced and energized!
- 1 large ripe avocado, or 2 small ripe avocados
- 2 small cucumbers
- 1 teaspoon Organic Burst Chlorella powder
- 1 green shallot, chopped, plus extra to garnish
- 1 clove garlic, chopped
- 1/4 cup coriander leaves
- 1/4 cup coconut water
- Juice of 1/2 lime
- Pinch cayenne pepper, or ground cumin
- Coconut yogurt (for garnish)
- Combine all the ingredients (except the yogurt) in a blender or food processor. Blend until smooth. If the soup is too thick, add more coconut water.
- Pour into serving bowls, cover and refrigerate for 1 hour.
- Garnish with a dollop of yoghurt and some chopped shallots.
