Goji Lemon Truffles

For the Truffles:

  • 1/4 cup Organic Burst Goji berries
  • 2 cups shredded coconut
  • 1 cup almond flour
  • 1/4 cup rice malt syrup
  • 1/4 cup lemon juice
  • 2 tablespoons coconut oil
  • Zest of one lemon
  • 1/2 teaspoon vanilla extract
  • Pinch of Himalayan/sea salt

For the Coating:

  • Zest of one lemon
  • 1/4 cup shredded coconut


  1. In a medium size bowl, mix coating ingredients and set aside.
  2. Make your truffles In a food processor, blitz all the ingredients until well combined.
  3. Scoop one tablespoon of mixture and roll it into a ball.
  4. Roll ball into coconut-lemon mixture to coat. Set it on a plate or tray.
  5. Repeat until the truffle mixture is all used up.
  6. Enjoy truffles immediately or pop them into the fridge.
