INGREDIENTS
For the Truffles:
- 1/4 cup Organic Burst Goji berries
- 2 cups shredded coconut
- 1 cup almond flour
- 1/4 cup rice malt syrup
- 1/4 cup lemon juice
- 2 tablespoons coconut oil
- Zest of one lemon
- 1/2 teaspoon vanilla extract
- Pinch of Himalayan/sea salt
For the Coating:
- Zest of one lemon
- 1/4 cup shredded coconut
METHOD:
- In a medium size bowl, mix coating ingredients and set aside.
- Make your truffles In a food processor, blitz all the ingredients until well combined.
- Scoop one tablespoon of mixture and roll it into a ball.
- Roll ball into coconut-lemon mixture to coat. Set it on a plate or tray.
- Repeat until the truffle mixture is all used up.
- Enjoy truffles immediately or pop them into the fridge.
