Spirulina Chia Pudding With Very Cherry Açaí Nice Cream

Welcome to Nice Cream heaven! Whoever said that healthy eating is boring has not tried this heavenly nice cream (aka banana ice cream) created by the incredibly creative food blogger Heike Mueller, the founder of @tastyasheck.

The flavor of spirulina reminds me always a bit of a kiss from the ocean and harmonizes perfectly with the fruity açaí-cherry nicecream. Plus the idea to combine 3 superfoods gives this dish the right punch.

INGREDIENTS (SERVES 1)


For the pudding:

  • 1 cup cashew milk (I like mine thick)

  • 1 medjol date (pitted)

  • ¼ teaspoon vanilla powder

  • 1 pinch of Himalayan pink salt
or sea salt
  • 3 tablespoons Organic Burst Chia seeds 

  • 1 teaspoon Organic Burst Spirulina powder


For the nice cream:

  • 1 handful frozen cherries

  • 1 teaspoon Organic Burst Acai powder 

  • 4 tablespoon nut milk


METHOD


For the pudding:

  1. Mix together in a wide jar, stir from time to time for about 10 min.
  2. Then store in the fridge for at least 15 mins or overnight

  3. Add 1 teaspoon Organic Burst Spirulina powder and stir well.


For the nice cream:

  1. Let the cherries thaw for about 5 min.
  2. Then start to blend with a high-speed blender until creamy but still frozen
.
